Happy Pancake Day!

Celebrated a belated "Pancake Day" (equivalent to Fat Tuesday) and had thin & crispy English-style pancakes, complete with lemon and powdered sugar.  YUM!

    I learned to make something similar to this in my cooking class. You bake it in cast iron though!
